The snack that keeps our house going…

I know, we are all busy and doing our best. I try really hard with my kids to make sure that we always have healthy-ish snacks available, because I know that if we don’t have something like that easy to grab, we fall into the trap of grabbing not so great for you snacks. This recipe my mom has been making for years, and when the grandkids go to her house she always lets them help and it has become a go-to favorite at my moms, my sisters and now my house.

 

There are many variations that you can do with this, to make it a little healthier, or more of a treat. I find that you only need one or two and it can fill you up, and give the energy boost that you need. I usually will make two batches, with different options (chocolate chips, raisins, plain etc). and you can freeze them as well if you need.

These are super simple to make, and take no time. You may even eat these quicker than it takes to make!

The great thing is it can be tailored to any dietary restrictions that you may have. I cannot have gluten, so I make sure to use certified gluten free oats, my youngest daughter cannot have dairy, so I usually don’t put anything extra in hers, and my other daughter for a treat will get the chocolate chips, but in our house the plain or raisins are a favorite.

 

I am not sure where the original recipe came from, so for today I will be giving credit to my mom for the recipe of our favorite Energy Balls

 

½ cup of chocolate chips (or any other extra that you would like to add)

1 cup of dry oatmeal (old fashioned oats)

1/3 cup of honey

½ cup of peanut butter or almond butter

½ cup of ground flaxseed

1 tsp of vanilla

1

Tbsp of Chia seeds

2/3 cup of coconut flakes

 

Refigerate mixture for 20 minutes. Then roll into balls. Enjoy
